Nowadays, margarine is a very popular butter substitute. It is manufactured by hydrogenation of vegetable oil. Vegetable oil contain a high proportion of unsaturated fat is therefore say to be a healthier substitute for butter. In this project, we are going to investigate whether margarine contains a higher proportion of unsaturation than butter and we will also carry out a literature review to check whether margarine is good to our health.
